Gingerbread Cookies

Gingerbread biscuits have gradually made their way into these traditional dates, and many people can't conceive of going through this time of year without eating them. And as Christmas is approaching, we have decided to bring you some recipes to accompany the festive season without wasting calories.

We have replaced the butter with healthier fats such as coconut oil. And we've used a little brown sugar for those with a real sweet tooth, but if you prefer, you can leave it out for this recipe.

The dough is made from oatmeal. Gourmet Oat Flour apple-cinnamon which gives it a much richer flavour. Although if you love the original ginger flavour of these biscuits, you can use the Gourmet Oat Flour neutral in taste. Oat flour is a good source of low-sugar protein. Its high fibre content delays the digestion of its starches and the absorption of glucose into the blood.

The other star ingredient in this biscuit recipe is ginger. Known for numerous benefits including improved nutrient absorption and digestion, making ginger biscuits a perfect dessert.

Here are the ingredients and the step-by-step instructions for preparation.

Ingredients (for 9 biscuits):

  • 70 g Oat Flour Gourmet Oat Flour apple-cinnamon
  • 90 g Whole Wheat Flour
  • 2 eggs
  • 6 tbsp. coconut oil
  • 7 g yeast
  • 20 g brown sugar (optional)
  • 7 g ginger
  • 10 g Sesame Seeds

Preparation:

  • Mix the coconut oil, sugar, eggs, ginger, ginger, yeast, sesame seeds and pinch of salt in a bowl.
  • Whisk everything well and then add the two flours (oat and wheat) little by little while mixing the dough at the same time, as shown in the video.
  • The mixture will be so thick that you will have to put your hands in and knead it.
  • Roll the dough into a ball, wrap in cling film and refrigerate for 30 minutes.
  • Take out the dough, expand it and shape the biscuits with moulds or with your hands.
  • Put them on a tray and bake them for 15 min. at 180º.
  • Take them out, let them cool and that's it!
